Feta Eggs and Toast

This is a simple, yet delicious breakfast option that uses ingredients that are available locally. You can find eggs all year round at a farmers’ market near you, and don’t forget to pick up some nice fresh bread for toast! You can also get creative with this recipe, by throwing in leftover local vegetables that your have in the fridge! Serves 4.


  • 1 tablespoon vegetable oil
  • 1/4 cup chopped onion
  • 4 eggs, beaten
  • 1/4 cup chopped tomatoes
  • 2 tablespoons crumbled feta cheese (try Fox Hill Cheese or Wandering Shepherd)
  • Salt and pepper to taste


Melt butter in a skillet over medium heat. Sauté onions until translucent. Pour in eggs. Cook, stirring occasionally to scramble. When eggs appear almost done, stir in chopped tomatoes and feta cheese, and season with salt and pepper. Cook until cheese is melted.
