Vegetarian Lasagna with a Béchamel Sauce

Renée Lavallée, also known as the “Feisty Chef”, created this delicious alternative to traditional meaty lasagna. The recipe can be found on her blog, along with many other wonderful dishes that have a focus on local ingredients!


For the Main Part of the Lasagna:

  • Pasta sheets
  • Sweet potatoes
  • Peppers
  • Onions
  • Mushrooms
  • Broccoli
  • Cauliflower
  • Olive Oil
  • Mozzarella Cheese

For the Béchamel Sauce:

  • 5 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 4 cups milk (Foxhill)
  • 2 teaspoons salt
  • 2 Bay leaves
